Tonight's Supper
Ah, the homemade meal. Girl, guess what.....? I did that. It might not look like much but I'm proud of it. Chicken and cheese enchiladas baked in my favorite glass pan.
I really wish I could share the recipe, but honestly, I cooked by taste this time, so exact amounts would be almost impossible to verify. The only unhealthy ingredient was the cheese. I even used the Carb Smart wraps for my seasoned chicken. I left the chicken, after shredding it, marinating in a red sauce that included bell peppers, onions, garlic, fajita powder, and diced chilies.
I impressed myself, so I will be tooting my own horn todays as I get to eat left overs.
